For many years, I have searched for an alternative to
Monsooned Indian Malabar, one of my favorite coffees memorable for its
full body and low acidity. Limited availability, high prices, and
huge freight costs have made roasting Malabar impossible for the last few
years.
Good fortune struck recently when I cupped an unusual
coffee grown in Coatapec, Mexico on a small Finca (Plantation) and
processed using the same dry method used in processing Malabar. Dry
processing uses the sun, wind, and rain to naturally remove the fruity
layers that coat the raw green bean. Dry processing does not deplete
precious water supplies or result in fouling the land with the residue of
the toxic pulp that remains. The process is environmentally
friendly.
My source of this rare coffee is the grand-niece of
the plantation owner who has allocated a limited supply of this wonderful
coffee for sale by me in Arizona. I can’t wait for you to taste it!
